Matt Dunne, leading Sommelier, multi award winner and creator of Opera Bar’s extensive wine list, has selected three of the hottest wines around to add to Opera Bar’s extensive winter wine list, and is offering a tasting flight of all three wines as a guide to their surprisingly affordable winter offering. The list includes a Fiano from Langhorne Creek South Australia, a Pinot Noir from Tamar Valley Tasmania and a preservative free Shiraz from McLaren Vale South Australia. To complement these, Dunne has matched a selection of dishes from Opera Bar’s latest menu which will enhance the flavours and enjoyment of both the food and wine.

Dunne’s carefully crafted, predominantly Australian wine list showcases some of the country’s best wines with an exciting mix of classic and trending varieties at an affordable price.  The list features a selection of whites and lighter reds, perfectly suited for the cooler months and demonstrates that there is no need to stick only to heavy reds in winter. The impressive list also has a selection of 10 preservative free and organic or biodynamic wines, eight of which are Australian made.

Aromatic and intensely flavoured giving fresh citrus curd notes balanced by a textural nuttiness and fresh acidity.

FOOD PAIRING: matched perfectly with fresh Australian shellfish from Opera Bar’s RAW bar- in particular Yamba King Prawns & Moreton Bay Bugs.


Pinot Noir | 2015 Ampel | Tamar Valley Tasmania

A vivacious style with aromas of raspberry and red current. Juicy in the mouth with great fruit intensity.

FOOD PAIRING: Works particularly well with Opera Bar’s salads: try with the Smoked Duck Salad with cauliflower, spinach, wild rice and balsamic or the Roasted Beetroot Salad with farro, walnut, feta and parsley (this was my absolute favourite!)

Preservative Free Shiraz | 2015 Yangarra | McLaren Vale SA

The PF Shiraz is made from grapes grown in Yangarra’s certified biodynamic single-estate vineyard, grown without herbicides, fungicides or synthetic chemicals. It offers plenty of florals and a great profile of tasty red fruits and spices to keep you warm.

FOOD PAIRING: delicious with Opera Bar’s Braised Lamb Shank- served with eggplant, capsicum, chickpea and mint or Opera Bar’s Prosciutto pizza with provolone and rocket.
